What is your favorite squirrel recipe?

I have always fried my squirrel like chicken but I am getting tired of that. My Grandma always made squirrel and dumplings, especially at Thanksgiving for a side item. She'd also does squirrel and gravy. These get a little old to.





I have heard of using shake and bake, do you do it like chicken?





What other good recipes do you have for squirrel?

shake and bake original recipe. Use it just like you would on a chicken. It comes out crisp on the outside, but tender, moist and tasty on the inside!!

I haven't had squirrel for many years, but one way I cook chicken and pork-


Use no flour or meal-


Just sauté the meat in a light cooking oil (safflower, sunflower, canola). 2-4 tablespoons.


While in the pan, sprinkle lightly with salt and pepper (lightly!!) or if you can find it- use ';Soul Seasoning';. (the green label is better than the blue)


Gently sear on each side then cover and smother until tender. Turn the heat down loooooow. Don't over cook. Often I add a red potato, quartered at the beginning.


The oil will blend with the juices from the meat and make a caramelised sauce. When you serve it- pour the sauce over the top.


Super fine!








On the ';Soul seasoning';. A company called ';Spice Supreme'; makes the green label, and it is the best you will find. ';Clover valley'; makes the blue label, and its just okay. If you use this- you do not need salt and pepper.
My grandmother would fry the squirrel in butter until golden brown, sometimes fry it in butter with a batter of flower and egg never got tired of it as a boy gram ma is gone now but I still remember her cooking squirrel and catfish mmmmgood.


Have had squirrel in pasta sauce some of my Italian friends made it at a game party several years ago and it was real good.
Because of disease and parasites, boil the entire cleaned carcass for 15 minutes before doing anything else with it!





Then a sprinkle of seasoned salt is so darn good, it is gilding the lily to get more complex, but sure, do whatever pleases you for a series of novelties in the old squirrel-for-dinner routine!





Various condiment dip concoctions are easy and fun.
Squirrel tacos or burritos; prepare it the same as you would with beef. I have had this with rabbit and other game meat. Just boil the meat and de-bone then add the spices and cook till the spices blend into the meat.

Put in a slow cooker and cook all day till it falls off the bone.Remove the bones and make a barbacue out of it.It's awsome...do deer that way too...
squirrel pot pie...i dont have a certain recipe as i never make it the same way twice...
