What's the best way to cook a squirrel?

Season the meat with salt, pepper and garlic powder then dust lightly with flour and brown well over medium heat, add chopped onions to pan and brown then cover with water and simmer until tender. donna c has the right answer but being from the mountains of WVa..you have to have squirrel gravy and biscuits...no way else...
soak your squirrels in salt water overnight to get out the wild taste. Drain them, roll in seasoned flour and fry like chicken. Make a gravy with the pan drippings. Serve with mashed potatoes or other veggies of your choice.
INGREDIENTS:


2 squirrels - skinned, gutted, and cut into pieces


4 large potatoes, quartered


1 pound carrots, chopped


1 green bell pepper, chopped


4 onions, sliced


2 cups water


1/4 medium head cabbage


1 teaspoon salt


1 teaspoon ground black pepper

DIRECTIONS:


In a slow cooker, place the squirrel meat, potatoes, carrots, green bell pepper, onions, water, cabbage, salt and ground black pepper.


Cover and cook on low setting for 8 hours.
ok i have a old recipewhich is junior league..





3 cans of tomatoes 17 squirrels


2 onions chopped


2 heads of garlic chopped


4 stalks of celery


2 bell peppers chopped cooking oil


4 tbls flour salt and pepper to taste





cut up meat like cutting up chicken ..salt and pepper brown meat ..then brown vegatables..


remove all from pan make your roux in a large pot with oil about 4 tbls to 4 tbls flour.whisk until smooth should be thinner than paste if not add a knob of butter..then add tomato sauce


then add a can of water all the veggies and the squirrel.simmer on low until the squirrel is tender and the sauce around it has thickened adding water when needed only to keep it from sticking..(also squirrel is kinda grease if cooked any other way) Serve over rice..
Lemon pepper squirrel is the best!! Just don't forget to tenderize the meat first! Rawhide mallets work the best. :)
Dredge in seasoned flour and fry like chicken.

once the meat is cleaned..





coat in a mixture of 1/2 corn meal and 1/2 flour....mix enough for the amount of meat you have....you can also add some garlic salt, and pepper to this if you want...the fry like chicken.





another thing to try...take the meat the de-bone it...place in a slow cooker with some cream of mushroom soup and and like a 1/4 cup of sour cream. Cook on low heat until meat is done. You can serve over white rice or pasta. also good over mashed potatoes.
